Some
beans require pre-soaking e.g. chickpeas, adzuki
beans etc Soak beans for at least 8 hours or
overnight after sorting. Beans will cook faster
and more evenly. Discard the water. Add fresh
water along with a piece of ginger or grated
ginger and allow lentils to boil in an open
pot for about 20 minutes. Simmer the beans covered
until soft. Proceed with the rest of the recipe
accordingly. |
